Description

A refreshing and healthy Mediterranean Couscous Salad packed with vibrant flavors, perfect for busy weeknights.


Ingredients

Scale
  • 1 cup couscous
  • 1 ¼ cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, diced
  • ½ cup feta cheese, crumbled
  • ¼ cup Kalamata olives, pitted and sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Boil the water or vegetable broth in a saucepan.
  2. Add the couscous, stir, and remove from heat. Cover and let sit for 5 minutes.
  3. Fluff the couscous with a fork and let it cool.
  4. Combine the cherry tomatoes, cucumber, red onion, feta cheese, and olives in a large bowl.
  5. Make the dressing by whisking together olive oil, lemon juice, oregano, salt, and pepper.
  6. Toss the cooled couscous with the veggie mixture and pour the dressing over everything.
  7. Serve immediately or chill for an hour for enhanced flavors.
