Description

This zesty Mexican Macaroni Salad comes together in about 30 minutes, perfect for a quick and easy weeknight dinner that your family will love!


Ingredients

  • 2 cups macaroni
  • 1 cup roasted corn
  • 1 cup black beans, rinsed and drained
  • 1 cup bell peppers, diced
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Optional: cooked chicken or ham

Instructions

  1. Cook the macaroni: Start by bringing a pot of salted water to a boil, then add the macaroni and cook according to package instructions. Usually, it takes about 8-10 minutes. Once it’s al dente, drain it and let cool for a few minutes.
  2. Combine the goodies: In a large mixing bowl, toss together the cooled macaroni, roasted corn, black beans, and diced bell peppers.
  3. Make the dressing: In a separate smaller bowl, whisk together the mayonnaise, sour cream, lime juice, cumin, and a couple pinches of salt and pepper.
  4. Mix it all together: Pour that creamy goodness over the pasta mixture and stir until everything is well combined.
  5. Optional protein boost: If you’re feeling fancy, add in shredded cooked chicken or diced ham at this stage.
  6. Chill out: Cover the bowl with plastic wrap and let it chill in the refrigerator for at least 30 minutes.
