Ingredients

- 1 pound ground lamb or beef
- 1 cup long grain basmati or jasmine rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken or beef broth
- 1 teaspoon cumin
- 1 teaspoon coriander
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat a splash of oil over medium heat. Add the chopped onion and minced garlic, cooking until translucent, about 4-5 minutes.
- Add the ground lamb or beef, cooking until brown and crumbly, about 6-8 minutes.
- Stir in the cumin, coriander, salt, and pepper, and cook until fragrant, about 1 minute.
- Add the rice and mix for a minute before adding the broth. Bring to a boil.
- Reduce heat, cover, and let simmer for about 20 minutes or until the rice is tender and has absorbed the broth.
- Fluff the rice with a fork and serve with a sprinkle of fresh parsley on top.
