Description

Quick and easy Mini Jalapeño Popper Egg Rolls that your family will devour! A fun appetizer that’s perfect for any gathering.

Ingredients

Scale
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 4 jalapeños, seeded and diced
  • 12 egg roll wrappers
  • 1/2 cup cooked bacon bits
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Vegetable oil, for frying

Instructions

  1. In a medium bowl, mix together the cheddar cheese and bacon bits until fully combined.
  2. In a separate bowl, combine the cream cheese, diced jalapeños, garlic powder, onion powder, salt, and black pepper; stir until well blended and creamy.
  3. Lay an egg roll wrapper on a clean flat surface with one corner pointing toward you. Place about 1 tablespoon of the cheddar-bacon mixture in the center, followed by about 1 tablespoon of the cream cheese mixture.
  4. Brush the edges of the wrapper with water. Fold the bottom corner over the filling, then fold in the sides and roll tightly to form a cylinder.
  5. Repeat with remaining wrappers and filling; lay completed rolls on a tray.
  6. Heat 1-2 inches of vegetable oil in a large skillet over medium-high heat until it reaches about 350°F.
  7. Carefully add egg rolls to the oil, frying for 2-3 minutes on each side until golden brown and crispy.
  8. Use tongs to remove the egg rolls from the oil and place them on a paper towel-lined plate to drain excess oil.
  9. Let them cool briefly before serving.

Notes

These egg rolls can be customized with various fillings like chicken or veggies. Serve with dipping sauces for added flavor.
