- 2 cans chickpeas, drained and rinsed
- 1 onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 bell pepper, chopped
- 1 zucchini, diced
- 1 can diced tomatoes
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the diced onion and minced garlic, sauté for 2-3 minutes until fragrant.
- Add the diced carrot, chopped bell pepper, and zucchini, and cook for another 5 minutes.
- Sprinkle in the ground cumin, ground coriander, smoked paprika, and cayenne pepper, stirring for 1 minute until fragrant.
- Add the drained chickpeas, diced tomatoes (with juice), and vegetable broth. Bring to a boil, then simmer for 20-30 minutes, stirring occasionally.
- Season with salt and pepper to taste, then serve hot, garnished with fresh cilantro.
Notes
This stew is very customizable; feel free to use whatever vegetables you have on hand. It freezes beautifully for up to 3 months.
