Description

A flavorful and comforting Moroccan Spiced Chickpea Stew that comes together in under 30 minutes, making it perfect for busy weeknights.


Ingredients

  • 2 cans chickpeas, drained and rinsed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 bell pepper, chopped
  • 1 zucchini, diced
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the diced onion and minced garlic, sauté for 2-3 minutes until fragrant.
  2. Add the diced carrot, chopped bell pepper, and zucchini, and cook for another 5 minutes.
  3. Sprinkle in the ground cumin, ground coriander, smoked paprika, and cayenne pepper, stirring for 1 minute until fragrant.
  4. Add the drained chickpeas, diced tomatoes (with juice), and vegetable broth. Bring to a boil, then simmer for 20-30 minutes, stirring occasionally.
  5. Season with salt and pepper to taste, then serve hot, garnished with fresh cilantro.

Notes

This stew is very customizable; feel free to use whatever vegetables you have on hand. It freezes beautifully for up to 3 months.
