- 1 cup fresh spinach, chopped
- 1 cup mushrooms, sliced
- 1 tablespoon olive oil or butter
- Salt and pepper to taste
Instructions
- Heat the olive oil or butter in a skillet over medium heat for 1-2 minutes.
- Toss in the sliced mushrooms and sauté until golden brown, about 4-5 minutes.
- Add the chopped spinach and cook until wilted, about 1-2 minutes.
- Whisk the eggs with salt and pepper in a bowl.
- Pour the whisked eggs into the skillet and let sit for 30 seconds before stirring gently. Scramble until cooked to your liking, about 3-4 minutes.
- Serve warm with toast or on a bed of greens.
