- 1 ½ cups graham crackers, crushed
- 8 oz. softened cream cheese (or whipped cream)
- 2–3 ripe kiwis, peeled and sliced
- 1 tablespoon sugar (optional)
- ½ cup shredded coconut
Instructions
- Prepare your base – Crush graham crackers into fine crumbs.
- Make the filling – Blend softened cream cheese until smooth and mix in sugar, if using.
- Slice the kiwi – Peel and slice kiwis into thin discs.
- Assemble the roll – Spread cream cheese filling over crushed graham cracker base.
- Add the kiwi – Arrange kiwi slices evenly over the cream filling.
- Roll it up – Gently roll the mixture into a log shape.
- Coconut coating – Sprinkle shredded coconut on the outside and press to adhere.
- Chill – Refrigerate for at least an hour before slicing.
