Description

A quick and easy no bake dessert featuring vibrant kiwis and creamy filling, perfect for summer days.


Ingredients

Scale
  • 1 ½ cups graham crackers, crushed
  • 8 oz. softened cream cheese (or whipped cream)
  • 23 ripe kiwis, peeled and sliced
  • 1 tablespoon sugar (optional)
  • ½ cup shredded coconut

Instructions

  1. Prepare your base – Crush graham crackers into fine crumbs.
  2. Make the filling – Blend softened cream cheese until smooth and mix in sugar, if using.
  3. Slice the kiwi – Peel and slice kiwis into thin discs.
  4. Assemble the roll – Spread cream cheese filling over crushed graham cracker base.
  5. Add the kiwi – Arrange kiwi slices evenly over the cream filling.
  6. Roll it up – Gently roll the mixture into a log shape.
  7. Coconut coating – Sprinkle shredded coconut on the outside and press to adhere.
  8. Chill – Refrigerate for at least an hour before slicing.
