- 1 cup rolled oats
- 1/2 cup peanut butter
- 1/4 cup honey or maple syrup
- 1/2 cup protein powder
- 1/4 cup mini chocolate chips or dried fruit (optional)
- 1/2 teaspoon vanilla extract
- Pinches of salt
Instructions
- Combine ingredients: In a large bowl, toss together rolled oats, peanut butter, honey or maple syrup, protein powder, mini chocolate chips or dried fruit, and vanilla extract. Mix until well combined.
- Roll into balls: Take a scoop of the mixture and roll into small balls, about 1 inch in diameter.
- Prepare for refrigeration: Place energy bites on a baking sheet lined with parchment paper.
- Refrigerate: Pop them into the fridge for about 30 minutes to firm up.
- Store & enjoy: Store in an airtight container in the fridge.
