This creamy and delightful rice pudding comes together in about 30 minutes, made all in one pot for a quick and easy dessert that your family will love!
Ingredients

- 1 cup Arborio rice
- 2 cups whole milk
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 2 eggs (optional)
Instructions
- In a medium saucepan, combine rice, milk, sugar, and salt. Bring to a boil over medium heat, stirring occasionally.
- Reduce heat to low and simmer for 15-20 minutes, stirring frequently until the rice is tender and the mixture is thick.
- Remove from heat and stir in vanilla extract and cinnamon. If using eggs, beat them in a separate bowl, temper with pudding, and stir back into the saucepan.
- Let the pudding cool slightly, then serve warm or chill in the fridge.
Notes
Serve warm topped with honey or nuts and cinnamon. Store in the fridge for up to 4 days.
