Description

This creamy and delightful rice pudding comes together in about 30 minutes, made all in one pot for a quick and easy dessert that your family will love!


Ingredients

Scale
  • 1 cup Arborio rice
  • 2 cups whole milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 2 eggs (optional)

Instructions

  1. In a medium saucepan, combine rice, milk, sugar, and salt. Bring to a boil over medium heat, stirring occasionally.
  2. Reduce heat to low and simmer for 15-20 minutes, stirring frequently until the rice is tender and the mixture is thick.
  3. Remove from heat and stir in vanilla extract and cinnamon. If using eggs, beat them in a separate bowl, temper with pudding, and stir back into the saucepan.
  4. Let the pudding cool slightly, then serve warm or chill in the fridge.

Notes

Serve warm topped with honey or nuts and cinnamon. Store in the fridge for up to 4 days.
