Ingredients

- 4 large onions
- 4 cups vegetable broth
- 1/4 cup olive oil
- 2 tablespoons fresh herbs (parsley, thyme, or rosemary)
- Salt and pepper to taste
Instructions
- Peel and trim the onions, leaving them whole.
- In a large pot, bring the vegetable broth to a boil over medium heat.
- Carefully add the onions to the boiling broth and reduce heat to a simmer. Cook for about 30 minutes until tender.
- While the onions are simmering, mix olive oil and chopped fresh herbs in a small bowl.
- Once the onions are done, remove them from the broth and place on a serving platter.
- Drizzle the herb dressing over the onions, season with salt and pepper, and serve warm.
