Description

A simple and comforting onion dish with herb dressing, perfect for busy weeknight dinners.


Ingredients

  • 4 large onions
  • 4 cups vegetable broth
  • 1/4 cup olive oil
  • 2 tablespoons fresh herbs (parsley, thyme, or rosemary)
  • Salt and pepper to taste

Instructions

  1. Peel and trim the onions, leaving them whole.
  2. In a large pot, bring the vegetable broth to a boil over medium heat.
  3. Carefully add the onions to the boiling broth and reduce heat to a simmer. Cook for about 30 minutes until tender.
  4. While the onions are simmering, mix olive oil and chopped fresh herbs in a small bowl.
  5. Once the onions are done, remove them from the broth and place on a serving platter.
  6. Drizzle the herb dressing over the onions, season with salt and pepper, and serve warm.
