Description

A quick and easy family favorite, these chicken cutlets are pan-fried to perfection and can be customized with various ingredients.


Ingredients

  • 4 boneless, skinless chicken breasts (about 1 pound)
  • 1 cup grated Parmesan cheese
  • 1 cup fresh breadcrumbs
  • ¼ cup fresh basil, finely chopped
  • 2 large eggs
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup all-purpose flour
  • Olive oil, for frying
  • Lemon wedges, for serving (optional)

Instructions

  1. Pound the chicken breasts in a plastic bag to about ½ inch thick (5-10 minutes).
  2. Set up a breading station with flour in one dish, beaten eggs in the second, and a mixture of Parmesan, breadcrumbs, basil, garlic powder, salt, and pepper in the third.
  3. Dredge each chicken breast in flour, then dip in the egg, and coat with the breadcrumb mixture.
  4. Heat about ¼ inch of olive oil in a large skillet over medium heat.
  5. Cook the chicken cutlets for about 4-5 minutes per side until golden brown and cooked through.
  6. Drain cutlets on paper towels and serve immediately with lemon wedges.
