Description

Quick and easy High Protein Pepperoni Pizza Rolls that are baked to perfection for a delightful weeknight dinner. Perfect for using up leftover veggies!


Ingredients

Scale
  • 1 cup whole wheat flour
  • 1/2 cup Greek yogurt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup low-fat mozzarella cheese, shredded
  • 1/2 cup pepperoni slices
  • 1/4 cup pizza sauce
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix the flour, Greek yogurt, baking powder, and salt until a dough forms.
  3. Flour your surface and roll out the dough into a rectangle about 1/4-inch thick.
  4. Spread pizza sauce over the dough, leaving about an inch border around the edges.
  5. Sprinkle mozzarella cheese over the sauce, then lay out pepperoni slices and any veggies.
  6. Roll the dough tightly from one end to the other to form a log.
  7. Slice the log into even rolls and place them on a baking sheet lined with parchment paper.
  8. Sprinkle Italian seasoning on top of each roll.
  9. Bake for 15-20 minutes or until golden brown.
  10. Let cool slightly before serving.

Notes

Serve with extra marinara for dipping. These rolls can be made ahead of time and stored.
