Description

A quick and easy weeknight meal featuring flavorful Persian skewered meat, customizable with your choice of meat and veggies.


Ingredients

Scale
  • 1 lb lamb or beef, cut into cubes
  • 1 onion, grated
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • Salt and pepper to taste
  • 1/2 cup plain yogurt
  • 1/4 cup olive oil
  • Fresh herbs (parsley, mint) for garnish
  • Pita bread or rice for serving

Instructions

  1. Mix together grated onion, minced garlic, ground cumin, coriander, turmeric, salt, and pepper in a bowl.
  2. Add cubed meat and coat well with the marinade. Cover and marinate in the refrigerator for at least 2 hours.
  3. Preheat the grill or oven to medium-high heat.
  4. Skewer the marinated meat cubes (and any additional veggies if desired).
  5. Grill skewers for about 10-15 minutes, turning occasionally, until charred and cooked through.
  6. Serve hot with yogurt for dipping and garnish with fresh herbs.

Notes

Leftover skewers can be stored in an airtight container in the refrigerator for about 3-4 days. Reheating in the oven at 350°F (175°C) is recommended.
