A quick and easy weeknight meal featuring flavorful Persian skewered meat, customizable with your choice of meat and veggies.
Ingredients

- 1 lb lamb or beef, cut into cubes
- 1 onion, grated
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- Salt and pepper to taste
- 1/2 cup plain yogurt
- 1/4 cup olive oil
- Fresh herbs (parsley, mint) for garnish
- Pita bread or rice for serving
Instructions
- Mix together grated onion, minced garlic, ground cumin, coriander, turmeric, salt, and pepper in a bowl.
- Add cubed meat and coat well with the marinade. Cover and marinate in the refrigerator for at least 2 hours.
- Preheat the grill or oven to medium-high heat.
- Skewer the marinated meat cubes (and any additional veggies if desired).
- Grill skewers for about 10-15 minutes, turning occasionally, until charred and cooked through.
- Serve hot with yogurt for dipping and garnish with fresh herbs.
Notes
Leftover skewers can be stored in an airtight container in the refrigerator for about 3-4 days. Reheating in the oven at 350°F (175°C) is recommended.
