Description

This delightful Pineapple Bread is a quick and easy treat that your family will love, perfect for breakfast or snack time.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup crushed pineapple, drained
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix together flour, sugar, baking soda, baking powder, and salt.
  3. In another bowl, cream together softened butter and eggs until smooth.
  4. Add the drained crushed pineapple and vanilla extract to the butter mixture and blend well.
  5. Gradually add the dry ingredients to the wet ingredients until just combined.
  6. Pour the batter into the prepared loaf pan and bake for 50-60 minutes.
  7. For the glaze, mix the powdered sugar with the milk until smooth.
  8. Once the bread is out of the oven, let it cool before drizzling the glaze on top.

Notes

Serve warm with cream cheese or enjoy on its own. Store at room temperature for up to 3 days, or freeze for up to 3 months.
