- 2 medium pork chops
- Salt and pepper to taste
- 60g melted butter
- 1 tsp fresh thyme, chopped
- 2 garlic cloves, minced
- 15ml extra virgin olive oil
- Lemon juice or zest (optional)
- Sliced onions (optional)
- Various leftover veggies (optional)
Instructions
- Preheat your oven to 220°C (428°F).
- Season both sides of the pork chops with salt and pepper.
- Melt the butter and mix with minced garlic, thyme, and lemon juice.
- Heat olive oil in a skillet and sear the pork chops for about 2 minutes per side.
- Baste the chops with the butter-garlic mixture.
- Transfer the skillet to the oven and bake for 10-14 minutes until the internal temperature hits 145°F.
- Let the pork chops rest for about 5 minutes before serving.
- Spoon some leftover butter mixture over the top before serving.

Serve with creamy mashed potatoes, steamed green beans, or rice for a complete meal.
