A quick and easy Indian-inspired potato salad that’s perfect for family gatherings and can be customized with your favorite veggies.
Ingredients

- 2 pounds Yukon Gold or red potatoes, cubed
- 2 tablespoons curry powder
- 1 teaspoon cumin
- Salt, to taste
- Pepper, to taste
- 1 small red onion, finely chopped
- 1 cup green peas, fresh or frozen
- 1 handful fresh cilantro, chopped
- 1 cup Greek yogurt or mayonnaise
- Juice of 1 lemon
Instructions
- Wash and cube the potatoes into uniform pieces. Boil them in salted water for 15-20 minutes until fork-tender. Drain and cool.
- In a skillet over medium heat, sauté chopped red onion in olive oil until translucent, about 3-4 minutes.
- In a large bowl, combine the drained potatoes, sautéed onions, peas, curry powder, cumin, salt, and pepper. Mix well.
- In a separate bowl, whisk together the Greek yogurt or mayonnaise and lemon juice. Drizzle over the potato mixture, folding gently to combine.
- Top with chopped cilantro, and mix gently. Refrigerate for at least 30 minutes to allow flavors to meld before serving.
Notes
Feel free to customize with leftover veggies or proteins. This salad is best served chilled but can be enjoyed warm.
