Description

A comforting and creamy pumpkin turkey soup that comes together in 30 minutes, perfect for weeknight dinners.


Ingredients

Scale
  • 1 lb cooked turkey, shredded or diced
  • 2 cups pumpkin puree
  • 4 cups chicken broth
  • 1 cup heavy cream or coconut milk
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • ½ tsp ground nutmeg
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat, add diced onion and minced garlic, sauté for 3-4 minutes until translucent.
  2. Add pumpkin puree, ground cumin, and ground nutmeg, stir for another 2-3 minutes until fragrant.
  3. Pour in chicken broth, stir and bring to a simmer, then reduce heat to low.
  4. Add heavy cream (or coconut milk) and mix well, seasoning with salt and pepper.
  5. Fold in shredded turkey and cook for another 5-10 minutes until heated through.
  6. Ladle into bowls and garnish with fresh parsley if desired.

Notes

This soup is customizable with remaining vegetables or alternate meats. It’s also freezer-friendly for meal prep!
