Description
A comforting and creamy pumpkin turkey soup that comes together in 30 minutes, perfect for weeknight dinners.
Ingredients

- 1 lb cooked turkey, shredded or diced
- 2 cups pumpkin puree
- 4 cups chicken broth
- 1 cup heavy cream or coconut milk
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- ½ tsp ground nutmeg
- Salt and pepper to taste
- Olive oil for sautéing
- Fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat, add diced onion and minced garlic, sauté for 3-4 minutes until translucent.
- Add pumpkin puree, ground cumin, and ground nutmeg, stir for another 2-3 minutes until fragrant.
- Pour in chicken broth, stir and bring to a simmer, then reduce heat to low.
- Add heavy cream (or coconut milk) and mix well, seasoning with salt and pepper.
- Fold in shredded turkey and cook for another 5-10 minutes until heated through.
- Ladle into bowls and garnish with fresh parsley if desired.
Notes
