Description
Sweet, tangy homemade raspberry jam just like Mom made. No pectin, only love and berries in every spoonful.
Ingredients
– 2 cups fresh raspberries (or thawed frozen)
– 1 cup granulated sugar
– 1 tbsp lemon juice (freshly squeezed)
– 1 tsp lemon zest (optional, for brightness)
– 1 tbsp chia seeds (optional, for thickening and added fiber)
Instructions
1. In a medium saucepan, combine the raspberries and sugar. Stir gently over medium heat.
2. As the berries release their juices, mash them with the back of a spoon (or use a potato masher).
3. Add lemon juice and zest, continuing to stir until the mixture comes to a gentle boil.
4. Reduce the heat and simmer for 10–12 minutes, stirring often. The jam should begin to thicken.
5. If using, stir in chia seeds during the last 2–3 minutes.
6. Remove from heat and let cool for 10–15 minutes. The jam will thicken more as it cools.
7. Pour into a sterilized jar and refrigerate. It will last up to 2 weeks.
Notes
– This jam is naturally thickened with lemon and optionally chia—no pectin needed!
– You can freeze the jam in airtight containers for up to 3 months.
– If you like a smoother jam, blend before cooling and jarring.
– Adjust sugar for tartness—start with 3/4 cup for a more tangy version.
– Makes a wonderful DIY gift when jarred and tied with a ribbon!
