Description

A hearty and soul-warming Ravioli Soup with Italian Sausage that comes together in about 30 minutes, perfect for a quick weeknight meal.


Ingredients

  • 1 package cheese ravioli
  • 1 pound Italian sausage
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. In a large pot over medium heat, cook the Italian sausage until browned for about 5-7 minutes.
  2. Add the chopped onion and minced garlic; sauté for 3-4 minutes until the onion is translucent.
  3. Pour in the chicken broth and stir in the canned diced tomatoes; bring to a boil.
  4. Add the cheese ravioli and cook according to package instructions, about 4-5 minutes.
  5. Reduce heat and gently stir in the heavy cream, warming through for about 2 minutes.
  6. Season with salt and pepper to taste.
