Description

A quick and easy recipe for rice paper pizza rolls packed with flavor, perfect for a weeknight dinner.


Ingredients

  • 6 rice paper sheets
  • 2 large eggs
  • 1 1/2 cups shredded Gouda cheese (about 5 oz)
  • 34 slices deli chicken or turkey, chopped
  • 1/4 cup finely chopped pepperoni
  • Homemade pizza sauce (or store-bought)
  • 1/2 cup tomato passata
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 tsp dried basil

Instructions

  1. Preheat your oven to 350°F (or use your air fryer if you have one).
  2. Whisk the eggs in a wide, shallow bowl until well combined, then season with salt and pepper.
  3. Dip each rice paper sheet in the egg mixture for about 5 seconds, ensuring it’s fully coated.
  4. Lay 3 rice paper sheets side by side with a slight overlap near the center.
  5. Spread a thin layer of pizza sauce on each sheet, then top with Gouda cheese, chicken or turkey slices, and pepperoni.
  6. Carefully fold the sides of the rice paper over the filling and roll it up tightly.
  7. Repeat to create additional rolls.
  8. Place rolls on a parchment-lined baking sheet.
  9. Bake in the oven (or air fryer) for about 15 minutes until golden brown and crispy.
  10. Let cool for a couple of minutes before serving.

Notes

These rolls are customizable; feel free to use different proteins or vegetables based on what you have on hand. Serve with marinara or ranch for dipping.
