A quick and easy recipe for rice paper pizza rolls packed with flavor, perfect for a weeknight dinner.

- 6 rice paper sheets
- 2 large eggs
- 1 1/2 cups shredded Gouda cheese (about 5 oz)
- 3–4 slices deli chicken or turkey, chopped
- 1/4 cup finely chopped pepperoni
- Homemade pizza sauce (or store-bought)
- 1/2 cup tomato passata
- 1 tsp dried oregano
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1 tsp dried basil
Instructions
- Preheat your oven to 350°F (or use your air fryer if you have one).
- Whisk the eggs in a wide, shallow bowl until well combined, then season with salt and pepper.
- Dip each rice paper sheet in the egg mixture for about 5 seconds, ensuring it’s fully coated.
- Lay 3 rice paper sheets side by side with a slight overlap near the center.
- Spread a thin layer of pizza sauce on each sheet, then top with Gouda cheese, chicken or turkey slices, and pepperoni.
- Carefully fold the sides of the rice paper over the filling and roll it up tightly.
- Repeat to create additional rolls.
- Place rolls on a parchment-lined baking sheet.
- Bake in the oven (or air fryer) for about 15 minutes until golden brown and crispy.
- Let cool for a couple of minutes before serving.
Notes
These rolls are customizable; feel free to use different proteins or vegetables based on what you have on hand. Serve with marinara or ranch for dipping.
