- 2 oranges (zested and juiced)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 tablespoon honey
- Fresh thyme or rosemary for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Rinse the duck under cold water and pat it dry. Season the cavity and skin with salt and pepper.
- In a bowl, whisk together the orange juice, zest, olive oil, and honey.
- Rub the orange mixture all over the duck.
- Place the duck on a roasting rack in a roasting pan.
- Roast for 1.5 to 2 hours, basting every 30 minutes.
- Check doneness with a meat thermometer aiming for 165°F (75°C).
- Let the duck rest for 10-15 minutes before carving.
- Garnish with fresh thyme or rosemary and serve.
