Description

A cozy dinner with crispy duck glazed in orange juice and zest, perfect for family gatherings.


Ingredients

  • 1 whole duck (about 45 lbs)
  • 2 oranges (zested and juiced)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Fresh thyme or rosemary for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the duck under cold water and pat it dry. Season the cavity and skin with salt and pepper.
  3. In a bowl, whisk together the orange juice, zest, olive oil, and honey.
  4. Rub the orange mixture all over the duck.
  5. Place the duck on a roasting rack in a roasting pan.
  6. Roast for 1.5 to 2 hours, basting every 30 minutes.
  7. Check doneness with a meat thermometer aiming for 165°F (75°C).
  8. Let the duck rest for 10-15 minutes before carving.
  9. Garnish with fresh thyme or rosemary and serve.
