Description

A zesty, flavor-packed Salmon Salad that comes together in about 20 minutes, perfect for busy weeknights.


Ingredients

Scale
  • 2 salmon fillets
  • 1/4 red onion, thinly sliced
  • 1 cup radishes, diced
  • 1 cup celery, diced
  • 1/4 cup fresh herbs (such as dill or parsley)
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the salmon fillets on a baking sheet and season with salt and pepper. Bake for 12-15 minutes until flaky.
  3. While the salmon is baking, combine red onion, radishes, celery, and fresh herbs in a large bowl.
  4. Whisk together mayonnaise and lemon juice in a smaller bowl, seasoning with more salt and pepper.
  5. Flake the baked salmon into bite-sized pieces and add to the vegetable mixture.
  6. Pour the dressing over and toss until combined.
  7. Serve chilled or at room temperature.
