Description

A quick and easy weeknight meal that combines creamy salmon, Sriracha, and melted cheese, all baked in one dish for a delicious family favorite.


Ingredients

  • 2 cups cooked sushi rice
  • 1 tablespoon rice vinegar
  • ½ teaspoon sugar
  • ½ teaspoon salt
  • 12 oz skinless salmon fillet, cooked and flaked
  • ¼ cup mayonnaise
  • 2 tablespoons Sriracha sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • ½ cup shredded mozzarella cheese
  • 2 sheets roasted seaweed (nori), cut into small squares
  • 2 green onions, thinly sliced
  • 1 tablespoon toasted sesame seeds

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a baking dish.
  2. In a bowl, combine sushi rice, rice vinegar, sugar, and salt; press into the bottom of the dish.
  3. In another bowl, mix flaked salmon, mayonnaise, Sriracha, soy sauce, and sesame oil until blended.
  4. Spread the salmon mix over the rice layer and top with shredded mozzarella cheese.
  5. Bake for 18-20 minutes until cheese is melted and bubbly.
  6. Garnish with green onions and toasted sesame seeds. Serve warm with nori squares for scooping.

Notes

This dish is customizable; feel free to replace salmon with shrimp or tofu for a vegetarian option.
