- 1 cup Rolled Oats
- ½ cup Shredded Coconut (unsweetened)
- ¼ cup Nut Butter (Almond or Peanut Butter)
- ¼ cup Honey or Maple Syrup
- ¼ cup Chocolate Chips
- ½ teaspoon Vanilla Extract
- Chocolate Drizzle (optional)
Instructions
- Combine the dry ingredients: In a large bowl, combine the protein powder, rolled oats, and shredded coconut. Whisk to ensure everything is evenly distributed.
- Mix the wet ingredients: In another bowl, mix together the nut butter, honey (or maple syrup), and vanilla extract until smooth.
- Blend it all together: Pour the wet mixture into the dry ingredients and stir until well combined, forming a dough-like consistency.
- Fold in the chocolate chips.
- Roll them up: Roll the mixture into small balls (about 1 inch in diameter), yielding around 20 balls.
- Drizzle time: Place the balls on a parchment-lined baking sheet. If using, melt chocolate and drizzle over the balls.
- Refrigerate: Chill in the fridge for at least 15 minutes to firm up before enjoying.
