A super comforting and easy lasagna made with sausage and ricotta, perfect for busy weeknights.
Ingredients

- 9 lasagna noodles
- 1 pound ground sausage
- 15 ounces ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 egg
- 2 cups marinara sauce
- 2 tablespoons fresh parsley
- 2 tablespoons fresh basil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions for about 8-10 minutes, then set aside.
- In a skillet over medium heat, cook the ground sausage until browned (about 6 minutes).
- In a bowl, mix the ricotta cheese, egg, parsley, basil, salt, and pepper until smooth.
- Spread half a cup of marinara sauce on the bottom of a baking dish.
- Layer three lasagna noodles over the sauce, then add half the ricotta mixture, half the sausage, and 1 cup of mozzarella cheese on top.
- Repeat the layers, then top with remaining marinara sauce, mozzarella cheese, and Parmesan cheese.
- Cover with foil and bake for 25 minutes, then remove the foil and bake for another 15 minutes until bubbly and golden.
- Let sit for 10 minutes before serving.
Notes
Feel free to add leftover veggies or change the protein to customize this dish.
