Description
A cozy Autumn soup made with sausage, tortellini, and spinach, perfect for a quick weeknight meal.
Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 pound Italian sausage, sliced
- 2 sweet potatoes, diced
- 6 cups chicken or vegetable broth
- 1 package (about 9 ounces) three-cheese tortellini
- 3 cups fresh spinach
- 1 cup cream
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic; sauté until translucent and fragrant, about 3-4 minutes.
- Add sliced Italian sausage and cook for about 5-7 minutes, stirring occasionally, until browned.
- Toss in diced sweet potatoes and stir, cooking for another 3-4 minutes.
- Carefully add the broth to the pot and bring to a boil, then reduce heat to let it simmer for about 10 minutes, until sweet potatoes are tender.
- Add the tortellini and spinach, cooking for another 5-7 minutes until tortellini is tender and spinach is wilted.
- Take the soup off the heat and swirl in cream. Season with salt and pepper to taste.
- Ladle into bowls and enjoy! Top with extra cheese or fresh parsley if desired.
Notes
Feel free to customize with leftover vegetables or different proteins. This soup stores well in the fridge for 3-4 days.
