Ingredients

- 1/2 cup plain yogurt
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 tablespoon tomato paste
- 3 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 pound boneless, skinless chicken breasts or thighs
Instructions
- Mix the Marinade: In a medium bowl, combine the yogurt, olive oil, lemon juice, tomato paste, minced garlic, paprika, cumin, oregano, salt, and a couple pinches of pepper. Stir until well blended.
- Marinate the Chicken: Toss in your bite-sized pieces of chicken, making sure they’re well-coated. Cover and refrigerate for at least 20 minutes.
- Skewer the Chicken: If you’re using wooden skewers, soak them in water for 30 minutes. Skewer the marinated chicken pieces, leaving a little space in between.
- Grill Time: Preheat your grill to medium-high heat. Grill the skewers for 2-5 minutes on each side, until the internal temperature reaches 165°F.
- Serve it Up: Allow them to rest for a few minutes before serving with warm pita bread and fresh veggies.
Notes
Customize by using shrimp or veggies if low on chicken. You can also marinate the chicken the night before for easy prep.
