Description

A delicious and hassle-free shrimp boil dinner, baked in foil packets for a flavorful and quick meal!


Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 2 cups baby potatoes, halved
  • 1 cup corn on the cob, cut into pieces
  • 4 tablespoons butter, melted
  • 2 cloves garlic, minced
  • 1 tablespoon Old Bay seasoning
  • 1 lemon, sliced
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss together shrimp, baby potatoes, corn, melted butter, minced garlic, Old Bay seasoning, salt, and pepper until well coated.
  3. Cut 12×12 inch pieces of aluminum foil and place a portion of the shrimp mixture in the center of each.
  4. Top with slices of lemon.
  5. Fold the foil to seal tightly, creating packets.
  6. Place packets on a baking sheet and bake for 25-30 minutes or until shrimp is opaque and veggies are tender.
  7. Open the packets carefully, garnish with parsley, and serve hot.

Notes

Feel free to customize with other vegetables or proteins like sausage.

Leftovers can be stored in the fridge for up to 3 days or frozen for 3 months.
