Description

A comforting slow-cooked meat and potato pie that’s perfect for family dinners. Easy to make and customizable with your choice of veggies or proteins.


Ingredients

  • 2 pounds beef stew meat, cut into cubes
  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cups beef broth
  • 2 tablespoons flour
  • 2 tablespoons olive oil
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 package refrigerated pie crusts
  • 1 egg, for egg wash

Instructions

  1. Brown the meat in a skillet with olive oil, seasoning with salt and pepper. Transfer to a slow cooker.
  2. Sauté the chopped onion in the same skillet until translucent, then stir in flour for 1 minute.
  3. Add beef broth and Worcestershire sauce, stirring until thickened. Pour over the beef in the slow cooker.
  4. Layer diced potatoes on top, cover, and slow cook on low for 6-8 hours.
  5. Preheat the oven to 425°F. Lay one pie crust in a pie dish and fill with the meat and potato mixture. Top with the second crust and trim edges.
  6. Brush the top crust with a beaten egg and bake for 30-35 minutes until golden brown.
  7. Let cool for 10-15 minutes before serving.
