A comforting slow-cooked meat and potato pie that’s perfect for family dinners. Easy to make and customizable with your choice of veggies or proteins.

- 2 pounds beef stew meat, cut into cubes
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cups beef broth
- 2 tablespoons flour
- 2 tablespoons olive oil
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 package refrigerated pie crusts
- 1 egg, for egg wash
Instructions
- Brown the meat in a skillet with olive oil, seasoning with salt and pepper. Transfer to a slow cooker.
- Sauté the chopped onion in the same skillet until translucent, then stir in flour for 1 minute.
- Add beef broth and Worcestershire sauce, stirring until thickened. Pour over the beef in the slow cooker.
- Layer diced potatoes on top, cover, and slow cook on low for 6-8 hours.
- Preheat the oven to 425°F. Lay one pie crust in a pie dish and fill with the meat and potato mixture. Top with the second crust and trim edges.
- Brush the top crust with a beaten egg and bake for 30-35 minutes until golden brown.
- Let cool for 10-15 minutes before serving.
