Ingredients

Scale
  • 1 lb ground beef (80/20 blend)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 12 small flour or corn tortillas
  • 6 slices American cheese, halved
  • 2 cups shredded lettuce or cabbage
  • 2 medium tomatoes, diced
  • 1/2 red onion, finely diced
  • 1 avocado, sliced
  • 1/2 cup sour cream
  • 1/4 cup pickled jalapeƱos (optional)
  • Fresh cilantro for garnish
  • 1/4 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 teaspoon pickle juice
  • 1/2 teaspoon garlic powder (for sauce)

Instructions

  • 1. Prep workspace: Divide ground beef into 12 small portions (about 1.3 oz each). Don’t form patties yet.
  • 2. Make special sauce: Whisk together mayonnaise, ketchup, mustard, pickle juice, and 1/2 tsp garlic powder. Set aside.
  • 3. Season beef: Gently mix portioned beef with 1 tsp garlic powder, onion powder, paprika, salt, and pepper.
  • 4. Heat pan: Heat large cast iron skillet over medium-high heat. Add vegetable oil.
  • 5. Form and smash: Place 3-4 beef portions in hot pan. Immediately smash with spatula, pressing firmly to create thin patties with irregular edges.
  • 6. Cook first side: Let cook undisturbed 2-3 minutes until edges are crispy and caramelized.
  • 7. Flip and cheese: Flip each patty, immediately top with half slice cheese. Cook 1-2 minutes until cheese melts.
  • 8. Rest patties: Transfer to plate, cover with foil. Repeat with remaining beef.
  • 9. Warm tortillas: In same pan, warm tortillas 30 seconds per side until soft.
  • 10. Assemble: Spread sauce on tortillas, add patty, pile on favorite toppings. Serve immediately.

Notes

Don’t pre-form patties – keep meat loose for best smashing results. Cast iron skillet gives best crispy edges. Patties cook quickly so watch carefully. Can prep toppings ahead for easy assembly. Works great for meal prep when components stored separately.
