Ingredients

  • 1 cup sourdough discard
  • 1.75 cups all-purpose flour
  • 0.5 cup granulated sugar
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp fine sea salt
  • 1 tsp ground cinnamon
  • 1 large egg
  • 0.25 cup whole milk
  • 0.25 cup unsalted butter (melted)
  • 1 tsp vanilla extract
  • 2 medium apples (peeled, cored, and finely diced)
  • 2 tbsp light brown sugar (packed)
  • 0.5 tsp ground cinnamon
  • 1 cup powdered sugar (sifted)
  • 23 tbsp milk or water
  • 0.5 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the dry ingredients: In a bowl, combine the flour, sugar, baking powder, baking soda, salt, and ground cinnamon.
  3. Combine the wet ingredients: In another bowl, whisk together the sourdough discard, egg, milk, melted butter, and vanilla extract.
  4. Combine the wet and dry: Pour the wet mixture into the dry ingredients and stir gently until combined.
  5. Fold in the apples: Carefully fold in the diced apples.
  6. Prepare the loaf pan: Grease a 9×5 inch loaf pan.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 40-45 minutes or until a toothpick comes out clean.
  9. Make the glaze: Whisk together the powdered sugar, milk (or water), and vanilla extract.
  10. Drizzle the glaze over the cooled loaf.

Notes
