- 1 cup sourdough discard
- 1.75 cups all-purpose flour
- 0.5 cup granulated sugar
- 1 tsp baking powder
- 0.5 tsp baking soda
- 0.5 tsp fine sea salt
- 1 tsp ground cinnamon
- 1 large egg
- 0.25 cup whole milk
- 0.25 cup unsalted butter (melted)
- 1 tsp vanilla extract
- 2 medium apples (peeled, cored, and finely diced)
- 2 tbsp light brown sugar (packed)
- 0.5 tsp ground cinnamon
- 1 cup powdered sugar (sifted)
- 2–3 tbsp milk or water
- 0.5 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Mix the dry ingredients: In a bowl, combine the flour, sugar, baking powder, baking soda, salt, and ground cinnamon.
- Combine the wet ingredients: In another bowl, whisk together the sourdough discard, egg, milk, melted butter, and vanilla extract.
- Combine the wet and dry: Pour the wet mixture into the dry ingredients and stir gently until combined.
- Fold in the apples: Carefully fold in the diced apples.
- Prepare the loaf pan: Grease a 9×5 inch loaf pan.
- Pour the batter into the prepared loaf pan.
- Bake for 40-45 minutes or until a toothpick comes out clean.
- Make the glaze: Whisk together the powdered sugar, milk (or water), and vanilla extract.
- Drizzle the glaze over the cooled loaf.
Notes
Can be customized with different apples, nuts, or sweeteners. Store at room temperature for up to three days.
