These delicious Sourdough Cheese Crackers come together in about 30 minutes and make for a quick and easy snack that your family will love!

- 230 grams (1 cup) sourdough starter, active or discard, stirred down
- 120 grams (1 cup) all-purpose flour
- 226 grams (8 ounces) sharp cheddar cheese, freshly shredded
- 3 tablespoons (42 grams) melted butter or olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- 1 teaspoon flaky salt (optional, for topping)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Combine the sourdough starter, flour, shredded cheddar cheese, melted butter or oil, salt, paprika, garlic powder, and cayenne pepper in a large bowl. Mix until a shaggy dough forms, about 2 minutes.
- Transfer the dough onto a work surface and knead for about 3–5 minutes until smooth and cohesive.
- Divide the dough into two equal portions. Wrap one portion in plastic wrap and refrigerate for up to 24 hours, or leave it to ferment at room temperature for up to 8 hours.
- Roll out one portion between two sheets of parchment paper to 1/16-inch thickness.
- Cut the dough into small squares using a pizza cutter.
- Dock each cracker with a fork or toothpick to prevent puffing. Sprinkle with flaky salt if desired.
- Bake for 30–40 minutes, rotating the pans halfway through, until golden brown and crisp.
- Cool completely on the baking sheet before serving.
