Ingredients

  • 1 ½ teaspoons instant yeast
  • 2 teaspoons granulated sugar
  • 2 cups + 1 Tablespoon all-purpose flour
  • 200 grams (about ¾ cup) sourdough discard (unfed, at room temperature)
  • 1 egg (lightly beaten)
  • 1 Tablespoon fresh parsley or rosemary (chopped)
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 2 Tablespoons unsalted butter (melted)
  • 7 Tablespoons unsalted butter (softened)
  • 1 Tablespoon fresh parsley or rosemary (chopped, for topping)
  • 1 Tablespoon garlic powder (for topping)
  • ½ teaspoon kosher salt (for topping)
  • Flaky sea salt (for topping)

Instructions

  1. Activate the yeast: Combine the warmed milk, instant yeast, and sugar in a bowl. Let it sit for about 5 minutes until bubbly.
  2. Mix the dough: Add flour, sourdough discard, beaten egg, chopped herbs, salt, and garlic powder. Slowly mix in melted butter until a shaggy dough forms.
  3. Knead the dough: Turn dough onto a floured surface and knead for 3-4 minutes until smooth.
  4. First rise: Place the dough in a greased bowl, cover, and let rise for 60-90 minutes until doubled in size.
  5. Prepare the topping: Mix softened butter, herbs, garlic powder, and salt in a small bowl.
  6. Shape the dough: Divide into 12 pieces, flatten each, and spread with the butter mixture.
  7. Put them in the pan: Fold pieces and place in a greased loaf pan. Cover and let rise for an additional 30-45 minutes.
  8. Bake: Preheat oven to 350℉ and bake for about 30 minutes, then cover with foil and bake an additional 5-10 minutes.
  9. Brush with reserved butter mixture and sprinkle with flaky sea salt.
  10. Enjoy! Let it cool in the pan for 10 minutes before serving.
