Southern Style Instant Pot Black Eyed Peas

Description

A versatile and comforting one-pot meal of black-eyed peas enriched with flavors of sausage, bacon, and spices, ready in about 30 minutes.


Ingredients

  • 1 lb dried black-eyed peas
  • 1 lb pork sausage (or turkey sausage/vegetarian option)
  • 4 slices bacon (or turkey bacon)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 bay leaf

Instructions

  1. Rinse the black-eyed peas under cold water and set aside.
  2. In the Instant Pot, select ‘Sauté’ and cook the bacon until crispy, about 5-7 minutes. Remove and set aside.
  3. In the same pot, add the pork sausage and cook until browned, about 5 minutes.
  4. Add the onions and garlic, cooking until softened, about 3-4 minutes.
  5. Add the rinsed black-eyed peas, chicken broth, smoked paprika, black pepper, salt, and the bay leaf. Stir to combine.
  6. Close the lid and set the pot to ‘Manual’ for 30 minutes.
  7. Once done, allow the pressure to release naturally for 10 minutes, then do a quick release for any remaining pressure.
  8. Remove the bay leaf, crumble the bacon back into the dish, and stir gently. Serve warm.

Notes

This dish is fantastic for meal prep and can be stored in an airtight container in the fridge for 4-5 days. It is also freezer-friendly for up to 3 months.
