Description

A delicious, customizable salad perfect for busy weeknights, packed with grilled chicken, black beans, corn, and a zesty chipotle-lime dressing.


Ingredients

  • 2 grilled chicken breasts
  • 1 can black beans, rinsed
  • 1 cup sweet corn, fresh or frozen
  • 4 cups romaine lettuce, chopped
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup chipotle-lime dressing

Instructions

  1. Season the chicken breasts with salt and pepper. Grill them on medium-high heat for about 6-7 minutes per side, or until fully cooked. Let rest before slicing.
  2. Combine the grilled chicken (sliced), black beans, corn, romaine lettuce, avocado, and cherry tomatoes in a large bowl.
  3. Drizzle the chipotle-lime dressing over the salad and toss gently to combine.
  4. Serve immediately or let chill in the fridge for about 15 minutes for better flavor melding.
