Ingredients

- 2 cups heavy cream
- 1 cup whole milk
- 1/2 cup sugar
- 5 large egg yolks
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground cloves
- 1/4 teaspoon black pepper
- Sugar for caramelizing the top
Instructions
- Preheat your oven to 325°F (160°C).
- In a medium saucepan, combine the heavy cream, whole milk, sugar, and spices. Heat over medium heat until just steaming.
- Remove from heat and let steep for 10 minutes.
- In a bowl, whisk together the egg yolks and vanilla extract until smooth.
- Strain the warm cream mixture into the egg yolks while whisking constantly.
- Divide the custard among six ramekins, filling them 3/4 full.
- Place the ramekins in a baking dish and fill with hot water halfway up the sides.
- Bake for 30-35 minutes or until set but slightly jiggly.
- Let cool on a wire rack for 30 minutes, then refrigerate for at least 2 hours.
- Before serving, sprinkle sugar on top of each custard and caramelize with a torch or broiler.
- Serve and enjoy your Spiced Chai Crème Brûlée!
Notes
This dessert can be made a day ahead and stored in the fridge. For best results, caramelize the sugar topping just before serving.
