Description

A delightful and easy-to-make dessert combining comforting spices with a luscious custard and a crispy caramelized topping.


Ingredients

Scale
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/2 cup sugar
  • 5 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon black pepper
  • Sugar for caramelizing the top

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a medium saucepan, combine the heavy cream, whole milk, sugar, and spices. Heat over medium heat until just steaming.
  3. Remove from heat and let steep for 10 minutes.
  4. In a bowl, whisk together the egg yolks and vanilla extract until smooth.
  5. Strain the warm cream mixture into the egg yolks while whisking constantly.
  6. Divide the custard among six ramekins, filling them 3/4 full.
  7. Place the ramekins in a baking dish and fill with hot water halfway up the sides.
  8. Bake for 30-35 minutes or until set but slightly jiggly.
  9. Let cool on a wire rack for 30 minutes, then refrigerate for at least 2 hours.
  10. Before serving, sprinkle sugar on top of each custard and caramelize with a torch or broiler.
  11. Serve and enjoy your Spiced Chai Crème Brûlée!

Notes

This dessert can be made a day ahead and stored in the fridge. For best results, caramelize the sugar topping just before serving.
