- 4 chicken thighs or breasts
- 2 tablespoons oil (olive or coconut)
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 2 tomatoes, chopped
- 1 tablespoon garam masala
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon turmeric
- 1/2 teaspoon chili powder
- Salt to taste
- Cilantro for garnish
Instructions
- Heat the oil in a large pan over medium heat until shimmering.
- Add the chopped onion and sauté until translucent and golden brown, about 5 minutes.
- Stir in the garlic and ginger, cooking until fragrant, about 1-2 minutes.
- Toss in the chopped tomatoes and let them cook down until they soften, about 3-4 minutes.
- Mix in the garam masala, cumin, coriander, turmeric, chili powder, and salt until well combined.
- Add the chicken pieces to the pan, coating them with the spice mixture.
- If it looks dry, splash in a bit of water and cover the pan, letting it simmer for 25-30 minutes until the chicken is cooked through.
- Garnish with fresh cilantro and serve hot with rice or flatbread.
