- 2 tablespoons soy sauce
- 1 tablespoon vinegar
- 1 tablespoon sugar
- 1 teaspoon chili sauce
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Make the sauce: In a bowl, whisk together the soy sauce, vinegar, sugar, chili sauce, and a couple pinches of salt and pepper until it’s blended nicely. Set it aside.
- Heat the oil: In a non-stick frying pan, heat the vegetable oil over medium heat.
- Fry the eggs: Crack the eggs into the hot oil carefully. Fry them until the whites are set and the yolks are still runny—about 3-4 minutes.
- Add the sauce: Drizzle your prepared sauce mixture over the eggs and cook for another minute.
- Garnish and serve: Remove from heat and sprinkle with chopped green onions.

Adjust the level of chili sauce according to your heat preference. Serve with steamed rice or quinoa for a complete meal.
