- 2 cups Sushi Rice
- 1 tbsp Rice Vinegar
- Salt (to taste)
- 2 tbsp Soy Sauce
- 1 Avocado, sliced
- 8 oz Ahi Tuna, diced
- 3 tbsp Mayo
- 2 tbsp Sriracha
- 1 Jalapeño, sliced
- 1 tbsp Sesame Seeds
- 2 Green Onions, chopped
- Oil (for frying)
Instructions
- Cook the sushi rice according to the package instructions, about 15-20 minutes. Mix in rice vinegar and salt after cooking.
- Cool the rice by spreading it out in a dish; chill if necessary for firmer texture.
- Cut the cooled rice into rectangles, approximately 2 inches by 1 inch.
- Fry the rice rectangles in heated oil over medium heat for about 3-5 minutes per side until golden brown.
- Prepare the Ahi tuna mix by combining diced tuna, mayo, sriracha, and soy sauce in a bowl.
- Top each crispy rice piece with a spoonful of the spicy tuna mix.
- Garnish with a slice of avocado and jalapeño on each piece.
- Serve immediately, garnished with sesame seeds and chopped green onions.
