Description

A hearty Steak and Ale Soup with Mushrooms that comes together in about 40 minutes, perfect for a cozy meal on chilly days.


Ingredients

Scale
  • 1 lb ribeye steak, diced
  • 1 cup mushrooms, sliced
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups beef broth
  • 1 cup ale
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery; cook for 5-7 minutes until softened.
  2. Add garlic and mushrooms; cook for another 2-3 minutes.
  3. Incorporate diced ribeye steak and brown on all sides for about 5-7 minutes.
  4. Pour in ale and let it reduce for about 5 minutes.
  5. Add beef broth and Worcestershire sauce, bring to a simmer, then reduce heat and cook for 30-40 minutes.
  6. Season with salt and pepper to taste, and serve hot with fresh parsley on top.
