A hearty Steak and Ale Soup with Mushrooms that comes together in about 40 minutes, perfect for a cozy meal on chilly days.
Ingredients

- 1 lb ribeye steak, diced
- 1 cup mushrooms, sliced
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups beef broth
- 1 cup ale
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery; cook for 5-7 minutes until softened.
- Add garlic and mushrooms; cook for another 2-3 minutes.
- Incorporate diced ribeye steak and brown on all sides for about 5-7 minutes.
- Pour in ale and let it reduce for about 5 minutes.
- Add beef broth and Worcestershire sauce, bring to a simmer, then reduce heat and cook for 30-40 minutes.
- Season with salt and pepper to taste, and serve hot with fresh parsley on top.
