Description

A delightful and chewy mochi filled with bananas, perfect for a quick dessert treat.


Ingredients

Scale
  • 130 g glutinous rice flour
  • 40 g cornstarch
  • 30 g granulated sugar
  • 160 g milk
  • 8 g vegetable oil (peanut oil recommended) or 10 g butter
  • 10 g dragon fruit juice (optional)
  • 8 small bananas
  • Coconut flakes for coating (optional)

Instructions

  1. Mix the dry ingredients: In a bowl, combine glutinous rice flour, cornstarch, sugar, and salt. Stir until smooth.
  2. Add the liquids: Pour in the milk and stir until you have a thick pancake batter.
  3. Steam it up: Pour the mixture into a shallow dish, cover, and steam for 20 minutes until firm and glossy.
  4. Add the fats: Mix in the oil (or butter) and optional dragon fruit juice, knead gently for about 5 minutes.
  5. Wrap those bananas: Take small pieces of mochi, flatten, and wrap around each banana.
  6. Coat in coconut flakes: Roll the mochi-wrapped bananas in coconut flakes until fully coated.

Notes

Serve immediately for the best texture. Store leftovers in an airtight container for up to 2 days or freeze for up to 2 months.
