Description

A quick and easy dessert that combines rich brownies with fresh strawberries and a creamy white chocolate ganache.


Ingredients

Scale
  • 1 lb fresh or frozen strawberries
  • 1/4 cup granulated sugar (50 g)
  • 1/2 tsp pure vanilla extract
  • 1 lemon zest and juice
  • A pinch kosher salt
  • 10 Tbsp unsalted butter (cut into 1/2″ pieces)
  • 6 oz white chocolate melts (170 g)
  • 1 large egg
  • 1 large egg yolk
  • 1 1/4 cups granulated sugar (250 g)
  • 1/4 cup freeze-dried strawberries (crushed into powder, optional)
  • 1 cup strawberry puree (140 g)
  • 1 tsp pure vanilla extract
  • 2 cups all-purpose flour (240 g)
  • 1 tsp kosher salt
  • 1/2 tsp baking powder
  • Drops pink gel food coloring
  • 8 oz white chocolate melts (240 g)
  • 2/3 cup heavy cream
  • 4 to 5 fresh strawberries (thinly sliced, optional)
  • Freeze-dried strawberries (crushed into powder, optional, for serving)

Instructions

  1. In a medium saucepan over medium heat, combine strawberries, sugar, vanilla, and lemon juice. Simmer until thickened like strawberry jam, about 12-15 minutes. Puree and let cool.
  2. Preheat oven to 325°F (165°C) and line a 9″ square baking pan with parchment paper.
  3. Melt butter and 6 oz white chocolate in a heatproof bowl in the microwave, stirring every 30 seconds until smooth.
  4. In a stand mixer, beat eggs, egg yolk, granulated sugar, and freeze-dried strawberries (if using) until pale and fluffy. Mix in vanilla and 1 cup cooled strawberry puree. Gradually add melted chocolate until smooth.
  5. Switch to paddle attachment, sift in flour, kosher salt, and baking powder. Beat until just combined and add pink food coloring until desired hue.
  6. Pour batter into prepared pan and bake for 35-40 minutes until edges are browned and a tester comes out clean. Cool in pan.
  7. For the ganache, melt 8 oz white chocolate and heavy cream until smooth and stir in 1/4 cup reserved strawberry puree. Spread over cooled brownies.
  8. Decorate with sliced fresh strawberries and crushed freeze-dried strawberries if desired.

Notes

These brownies can be served warm or at room temperature. Pair them with vanilla ice cream for extra indulgence!
