Ingredients

  • 1/2 cup sago pearls
  • 1 cup strawberries, chopped
  • 1 cup coconut milk
  • 1 cup matcha milk (made with your choice of milk)
  • 1/4 cup sugar (optional)
  • Water (for boiling sago)

Instructions

  1. Cook the sago pearls: Bring a pot of water to a rolling boil. Toss in the sago pearls and let them cook for about 10-15 minutes, stirring occasionally. Drain and rinse under cold water.
  2. Make the creamy coconut base: In a bowl, mix the coconut milk with sugar (if using) and whisk until smooth.
  3. Layer the dessert: In serving glasses or bowls, layer the cooked sago pearls, followed by the chopped strawberries, and add coconut jelly if desired.
  4. Pour on the matcha milk over the layers.
  5. Serve: Chill in the refrigerator before serving or enjoy immediately.
