Description

A refreshing no-bake dessert featuring a creamy filling topped with vibrant fresh fruits, perfect for summer.


Ingredients

Scale
  • 1 pie crust (store-bought or homemade)
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups mixed fresh fruits (strawberries, blueberries, kiwis, peaches)
  • 1/4 cup apricot jam

Instructions

  1. Preheat the oven to 350°F (175°C) and bake the pie crust until golden brown, about 10-12 minutes. Allow it to cool completely.
  2. In a mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form, about 3-5 minutes.
  3. Spread the whipped cream filling evenly over the cooled pie crust.
  4. Arrange the mixed fresh fruits on top of the cream filling as desired.
  5. In a small saucepan, heat the apricot jam over low heat until melted, about 2-3 minutes. Brush it over the fruits.
  6. Chill the tart in the fridge for at least 1 hour before serving.

Notes

Garnish with a sprig of mint for added freshness. Store leftovers in an airtight container in the fridge for 3-4 days.
