This quick and easy taco rice bowl comes together in 30 minutes for a delicious weeknight dinner! Family-friendly and loaded with flavor!


Ingredients

  • 2 cups cooked rice (white or brown)
  • 1 lb ground beef or chicken
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 packet taco seasoning
  • 1 cup diced tomatoes (fresh or canned)
  • 1 cup shredded lettuce
  • 1 cup cheese (cheddar or Mexican blend)
  • Sour cream for serving (optional)
  • Salsa for serving

Instructions

  1. In a large skillet, heat a drizzle of olive oil over medium heat and add your ground beef or chicken. Cook until browned (about 6-7 minutes) and drain excess fat.
  2. Toss the taco seasoning into the skillet. Add a splash of water as directed on the packet, stirring occasionally until fragrant (1-2 minutes).
  3. Add the black beans and corn. Stir them in and let everything heat through (2-3 minutes).
  4. Divide the cooked rice among bowls and pile the seasoned meat mixture on top. Layer with diced tomatoes, lettuce, and cheese.
  5. Serve with sides of sour cream and salsa.
