- 2 cups cooked rice (white or brown)
- 1 lb ground beef or chicken
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 packet taco seasoning
- 1 cup diced tomatoes (fresh or canned)
- 1 cup shredded lettuce
- 1 cup cheese (cheddar or Mexican blend)
- Sour cream for serving (optional)
- Salsa for serving
Instructions
- In a large skillet, heat a drizzle of olive oil over medium heat and add your ground beef or chicken. Cook until browned (about 6-7 minutes) and drain excess fat.
- Toss the taco seasoning into the skillet. Add a splash of water as directed on the packet, stirring occasionally until fragrant (1-2 minutes).
- Add the black beans and corn. Stir them in and let everything heat through (2-3 minutes).
- Divide the cooked rice among bowls and pile the seasoned meat mixture on top. Layer with diced tomatoes, lettuce, and cheese.
- Serve with sides of sour cream and salsa.
