Description
A delightful and quick Filipino dessert made with silken tofu and chewy sago pearls, topped with a sweet arnibal syrup.

- ½ cup sago or tapioca pearls
- Water for cooking
- 1¼ cups water (for arnibal)
- 1⅓ cups brown sugar
- 1¼ teaspoons pure vanilla extract
- 16 ounces silken tofu
- Steamer basket for warming
Instructions
- Cook the sago: Start by cooking the sago or tapioca pearls according to the package instructions—usually, this means boiling in water until they’re translucent and chewy, around 20 minutes. Once they’re done, drain the pearls and return them to the pot you used for cooking. Add a couple of tablespoons of arnibal to lightly flavor the pearls, mixing gently so they’re all coated. Set aside.
- Make the arnibal: In a saucepan, combine 1¼ cups of water, the brown sugar, and vanilla extract. Bring it all to a boil over medium heat. Lower the heat to a simmer and cook for about 3-4 minutes, stirring occasionally until you start smelling those caramelized notes. The mixture should reach a syrupy consistency, and then you’ll want to cover it and set it aside.
- Steam the tofu: While the arnibal is cooling a bit, it’s time to warm the silken tofu. Place it on a heat-proof plate, using parchment paper to prevent sticking, and carefully place it in a steamer basket. Steam it for about 10 minutes, or until it’s warmed through and silky.
- Assemble and serve: Scoop thin layers of the warm tofu into small cups or bowls. Top with that warm arnibal syrup and a generous scoop of the chewy sago pearls. Serve it warm.
