- 5 large potatoes, peeled and diced
- 1 onion, chopped
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 4 strips of bacon, cooked and crumbled
- 1 cup sour cream
- Salt and pepper to taste
- Chives or green onions for garnish
Instructions
- Sauté the onion in a large pot over medium heat with a drizzle of olive oil until translucent, about 5 minutes.
- Add the diced potatoes and broth to the pot. Bring to a boil, then reduce heat and let it simmer for about 15 minutes until the potatoes are fork-tender.
- Blend the soup until smooth with an immersion blender or gently mash the potatoes for a chunkier texture.
- Stir in the heavy cream, half of the cheddar cheese, sour cream, and crumbled bacon. Heat through for about 5 minutes.
- Season with salt and pepper to taste.
- Serve hot, topped with remaining cheddar cheese and sprinkled with chives or green onions.
