Description

A cozy family favorite that comes together in about 30 minutes. This delicious Loaded Potato Soup is perfect for a quick weeknight dinner.


Ingredients

Scale
  • 5 large potatoes, peeled and diced
  • 1 onion, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 4 strips of bacon, cooked and crumbled
  • 1 cup sour cream
  • Salt and pepper to taste
  • Chives or green onions for garnish

Instructions

  1. Sauté the onion in a large pot over medium heat with a drizzle of olive oil until translucent, about 5 minutes.
  2. Add the diced potatoes and broth to the pot. Bring to a boil, then reduce heat and let it simmer for about 15 minutes until the potatoes are fork-tender.
  3. Blend the soup until smooth with an immersion blender or gently mash the potatoes for a chunkier texture.
  4. Stir in the heavy cream, half of the cheddar cheese, sour cream, and crumbled bacon. Heat through for about 5 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot, topped with remaining cheddar cheese and sprinkled with chives or green onions.

Notes

Serve with crusty bread or buttery rolls for dipping. This soup is freezer-friendly; store in an airtight container for up to 3 months.
