Description

A warm, cheesy tater tot casserole that comes together in about 30 minutes for a quick and easy weeknight dinner your family will love.


Ingredients

Scale
  • 1 pound ground beef (or turkey)
  • 1 can cream of mushroom soup
  • 1 cup shredded cheese
  • 1 cup frozen mixed vegetables
  • 1 package tater tots
  • Salt and pepper to taste
  • Optional: onion and garlic powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Brown the ground beef in a skillet over medium heat for about 5-7 minutes, seasoning with salt, pepper, and optional onion and garlic powder.
  3. Drain any excess fat from the cooked beef.
  4. Mix the cooked beef, cream of mushroom soup, mixed vegetables, and half of the shredded cheese in a large bowl until combined.
  5. Spread the beef mixture into a greased 8×8-inch casserole dish.
  6. Top the casserole with tater tots, arranging them as desired.
  7. Bake in the oven for 25-30 minutes until tater tots are golden brown and the dish is bubbling.
  8. Cheese the casserole by sprinkling the remaining cheese on top and baking for an additional 5 minutes.
  9. Serve warm after allowing it to cool for a few minutes.

Notes

Feel free to customize with leftover veggies or meats. Store leftover casserole in an airtight container in the refrigerator for 3-4 days or freeze for later use.
