A warm, cheesy tater tot casserole that comes together in about 30 minutes for a quick and easy weeknight dinner your family will love.

- 1 pound ground beef (or turkey)
- 1 can cream of mushroom soup
- 1 cup shredded cheese
- 1 cup frozen mixed vegetables
- 1 package tater tots
- Salt and pepper to taste
- Optional: onion and garlic powder
Instructions
- Preheat your oven to 350°F (175°C).
- Brown the ground beef in a skillet over medium heat for about 5-7 minutes, seasoning with salt, pepper, and optional onion and garlic powder.
- Drain any excess fat from the cooked beef.
- Mix the cooked beef, cream of mushroom soup, mixed vegetables, and half of the shredded cheese in a large bowl until combined.
- Spread the beef mixture into a greased 8×8-inch casserole dish.
- Top the casserole with tater tots, arranging them as desired.
- Bake in the oven for 25-30 minutes until tater tots are golden brown and the dish is bubbling.
- Cheese the casserole by sprinkling the remaining cheese on top and baking for an additional 5 minutes.
- Serve warm after allowing it to cool for a few minutes.
Notes
Feel free to customize with leftover veggies or meats. Store leftover casserole in an airtight container in the refrigerator for 3-4 days or freeze for later use.
