Ingredients
Scale
- 1/4 cup soy sauce (or tamari for gluten-free)
- 3 Tbsp brown sugar (light or dark)
- 1 Tbsp water
- 1 clove garlic, minced
- 1 tsp grated fresh ginger (or 1/4 tsp ground ginger)
- 2 Tbsp cooking oil, divided
- 1.75 lbs boneless, skinless chicken thighs
Instructions
- Prepare the marinade by mixing soy sauce, brown sugar, water, minced garlic, grated ginger, and 1 tablespoon of oil in a medium bowl until the sugar dissolves.
- Place chicken thighs in a shallow dish and pour marinade over them. Cover and marinate in the refrigerator for at least 30 minutes.
- Heat the remaining oil in a skillet over medium heat. Remove chicken from marinade and sear in skillet for 5–7 minutes on each side until golden brown and cooked through.
- Allow the chicken to rest for 5 minutes before slicing.
- Slice the chicken into strips and serve warm.
Notes
For added flavor, you can spice it up with red pepper flakes or Sriracha in the marinade. To make it vegetarian, substitute chicken with firm tofu or tempeh.
