Description

A comforting and delicious rice dish that comes together in one pot in about 30 minutes, perfect for weeknight meals.


Ingredients

Scale
  • 2 cups long-grain or jasmine rice
  • 4 cups chicken broth (or vegetable broth for vegetarian version)
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and garlic, sautéing until translucent (about 3-4 minutes).
  3. Stir in the rice and toast for 2-3 minutes.
  4. Pour in the chicken broth and add paprika, garlic powder, onion powder, salt, and pepper.
  5. Bring to a boil, then cover and simmer for 18-20 minutes until the rice is cooked and broth is absorbed.
  6. Fluff with a fork and garnish with chopped parsley before serving.
